Caramelized Onion Tomato Soup

Spoiler alert: tomato soup from a can is not good for you, and it's not that hard to make. So leave the excuses at home and Get Cooked.
Step 1: Caramelize Those Onions (Patience Required)
Take a few onions, slice them up, and throw them in a pan with oil or butter over low heat. Now, put on a good audiobook because this is a slow burn, not a quick fry. On my playlist right now is Crazy Faith by Mike Todd and Let Them Theory by Mel Robbins. Listen to them. Now, let the onions cook until they're soft and golden and smell like magic.
Step 2: Add Your Tomatoes & Broth
Now throw in whatever tomatoes you have. Cherry tomatoes? Perfect. Random sad-looking tomatoes from your fridge? Fantastic. Canned tomatoes? Fine.
Add some broth (fancy homemade stuff or just water + bouillon cubes—do you).
Sprinkle in your favorite spices (oregano, cayenne, maybe a little smoked paprika if you’re feeling wild).
Let it all simmer until the tomatoes burst and get soft.
Step 3: Blend It Up
If you have an immersion blender, congrats—go for it. If not, take a big slotted spoon, fish out the onions & tomatoes, and blend them in a little blender with some fresh basil. This is my preferred method if not just to see how damn creamy the onions get. It's glorious. Pour it all back into the broth and mix it up.
Step 4: Make It Creamy (Your Way)
Here’s where it gets personal. I spend my time between Italy and North America and my choices vary drastically depending where I am.
✔ If you’re in Italy, add cream (because apparently dairy over there doesn’t hate our digestive systems).
✔ If you’re in North America, go coconut milk or whatever non-dairy dairy you want. Stay away from Oat Milk tho because first - ew, and second, it's not good for you.
✔ If you don’t do creamy soups, skip this step & live your best life.
Step 5: The Finishing Touches
Top with parmesan (or nutritional yeast if you’re dairy-free but still crave that umami hit). Pair with good bread but if you're in North America, for the love of God go to the bakery or make it yourself. None of the bagged bread from the market. Get ready for pure cozy, comforting bliss.
